1/2 cup shortening (Butter)
2/3 cup sugar
1 cup ground, unpeeled apples
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 cup chopped nuts
Cream shortening and sugar together. Blend in
beaten eggs and fruit which has been chopped in
food processor (turn on and off so as not to puree).
Include juice with the apple. Stir in mixed dry
ingredients. Blend in nuts. Pour batter into greased
loaf pan (8x4). Bake at 350° for 55 to 60 minutes.
Makes 1 loaf.
